it’s what’s for dinner.

Alright, so it’s what we had for dinner last night. Sadly, there aren’t enough hours in the day for me to put more than about one post up a day. Sorry.

Blame it on the 9-5 thing.
Or more like that 8-6p thing. When in reality it should be closer to 7am-9pm, but my panic attacks would triple in size and I don’t have a prescription for Xanax.

Oh wait, what was I saying?
Anybody still here?

Dinner.
Pork chops for dinner. Even better.

Pork chops have always been a staple in my weekly dinner menu. Never fails. If my mind goes blank and I’ve got nothing more than pasta meals planned, guess what shows up in the rotation?
You guessed it. Pork chops.

The thing is, they’re super easy to make and don’t take much time or skill.

So here’s how I make them.

Heat up some oil in a pan over medium heat. Add butter to make it taste better.
001

Coat your pork chops in seasoning salt, ground pepper and if you’re daring, ground mustard and cumin. (Don’t ask questions. Just go with it.)
Dredge in flour.

Fry those bad boys up.
005

You want them to get nice and golden brown around the edges before flipping. About 5 minutes on each side.

In the meantime, feel free to snack. These croutons are pretty much my pre-dinner snack choice.

And to answer your question…no I didn’t have salad. I just don’t have enough patience to wait for dinner to be ready.
It’s a problem.
Admitting it is half the battle.

So once the chops are all fried up, they should look like this.

And then you can serve them with these.

Just try to ignore that creepy smile. All you have to know is that Sister Schubert makes one helluva dinner roll.
ps. she’s from Alabama. Proving that I am not, in fact, the only decent thing to come out of that state.

Throw some vegetables on a plate and look at that, you too can fake having a well balanced meal.

I could be totally mistaken, but I think my sister actually went to college with the “sister’s” daughter. They studied abroad together too! Crazy small world, huh?
