steak with spinach and balsamic mushrooms

Aside from the White Trash Wednesday recipes, it has been quite a while since I posted a true recipe. My apologies.
So let’s do this right, shall we?

Tonight I made one of my favorite dinners courtesy of Real Simple magazine. I came across this recipe about a year ago and have made it on a fairly consistent basis ever since. I really do love it and I hope you do too.

You will need:
2 tbsp olive oil
1 lb flank steak
Salt (kosher if you have it) and black pepper
1 lb button mushrooms sliced
1 tbsp balsamic vinegar
1/4 cup heavy cream
baby spinach…about 3 handfuls as it wilts very quickly and very easily

To make:
Heat 1 tbsp oil in a large skillet over medium-high heat. Season the steak with salt and pepper. For medium-rare, cook 3-5 minutes per side.

Add the mushrooms and season with salt and pepper. Cook, tossing occasionally, until browned.

Let steak rest at least 5 minutes before slicing.

Add spinach and cook together about 5 minutes. Stir in the balsamic vinegar.

Remove from heat and stir in the cream.

Serve immediately.
