mini taco salad

I cannot take credit for this little nugget of creativity because I’m certainly not this creative. However, I sure can make it.

Over at this clever little site called the Half-Assed Kitchen, the author made mini taco salads. How cute right? You appease small children and set yourself up for portion control all at the same time. Sounds like a win-win to me.

As I make everything for two, this recipe can be doubled or tripled…

You’ll need:
4- small flour tortillas
1 lb ground beef
1 tomato, diced
diced onions
lettuce shreds
Mexican blend cheese
1 package taco seasoning
black beans
sour cream

To make:
Preheat oven to 350 degrees. In a saucepan, saute ground beef until browned. Drain grease and return to saute pan. Add taco seasoning and 1/2 cup water. Cook until mixed through and heated well.
Meanwhile, cook black beans over medium heat.

Grease large muffin tin with cooking spray. Push the tortillas into coated mufin tins. Fill each tortilla cup with beef, black beans, and cover with cheese. Bake the tortilla cups for 10-12 minutes or until cheese is bubbly and the tortillas are golden brown.

Garnish with tomatoes, onions, lettuce and sour cream.

    I have a slightly different version of this that uses biscuits instead of tortillas for the shell. Perhaps I need to put this back in the rotation!
