Grandma Bessie’s Date Squares

For all of our sakes I am posting a recipe. That furball below is starting to gross me out. And that came off my dog…just from brushing her…after 10 minutes. I know. Ugh.

So let’s get back to basics. This recipe comes from an old friend…She’s not old. Actually, she’s really young. I’ve just known her for a long, long time. There are some good stories there, but I’ll have to save those for a rainy day. Anyway, this recipe comes to us courtesy of Molly.

“It’s something a little different and I think it goes best with fall and winter foods…but don’t wait ’till fall to make it and try it!!!”

Grandma Bessie’s Date Squares
Date Mixture:
1 pound chopped dates
1 cup brown sugar (light, packed)
1 cup boiling water
Pour water into pot w/ brown sugar and dates. Stir until blended.

Sift:
1 cup flour
2 teaspoons baking powder
1/2 teaspoon salt

Combine with:
2 cups instant Quaker oatmeal
Then add:
1 cup brown sugar

Gradually add:
1 cup melted butter
Mix above oatmeal mixture with fork.
Butter pan.
Line pan with 1/2 oatmeal mixture.
Spread dates
Top with remaining oatmeal mixture.
Bake at 350 for 30-35 minutes.

Thank you Molly! Can’t wait to try it.
