veggie lasagna

I didn’t make this tonight because I’m finishing up a full day of fattie food goodness. However, I thought that I should at least post a recipe that was a little bit healthier than everything I’ve taken down today.

So without further adieu – vegetable lasagna.

You will need:
Part 1:
2 14oz cans chopped tomatoes
1 8oz can tomato puree
1 yellow pepper
1 tsp basil
1/2 tsp red pepper

Part 2:
2 cups cottage cheese
1 egg
1 tbsp fresh parsley
baby spinach
3/4 cups parmesan
2 8oz packages of mozarella (low fat)

Part 3:
no boil lasagna noodles

To make:
Saute yellow peppers until tender. Add remaining part 1 ingredients.
Combine part 2 ingredients, mix well.
Spray a casserole dish with Pam. Pile in the lasagna noodles. Followed by 1/2 of the tomato mixture (better known as “part 1”). Then add 1/2 of the cottage cheese mix. Top that off with a layer of spinach. Finish it off with a layer of mozarella.

Repeat that entire process.

Cover with aluminum foil and bake for 25-30 minutes at 350. Remove foil and bake for another 5-10 minutes.

Let sit for 5 minutes.

Have a seat and enjoy.

    i must confess that i haven’t made this meal in about 8 or 9 years. i actually had forgotten about it until sister mentioned it the other day. i rifled through my recipe box and voila! it was buried in there.
