White Trash Wednesday! A snack

This one may disgust a few of you so I’m just giving you fair warning now. If mayo creeps you out, have a nice day, we’ll talk tomorrow. If not, please read ahead.

I don’t know if this hors d’oeuvre has a name so let’s just cut to the chase…

You’ll need saltines and mayo. 

Spread the mayo over the crackers.

And you’ve got yourself a snack.

To fancy this little appetizer up, serve with a nice vino.  Preferably a nice red.

Or pink.  Or whatever shade of fuschia that is.

Now who wants to come up with a name for this “treat”? There’s no prize (remember, I don’t have any paid advertisers here…{anybody want to advertise here?}). But there are bragging rights.
And isn’t that better than a prize?

Try something new

I’m always finding that by the end of the week, there’s a recipe I’m dying to test out. Last weekend, it was blackberry ice cream and bacon wrapped jalapenos. This weekend, homemade bbq chicken pizza (California Pizza Kitchen style).  So if you’re up for the challenge, take to your kitchen, put that apron on, and get your hands dirty. 

If you don’t already have a recipe in mind, here are a few to get you started…

White Trash Wednesday! Diet Coke Sloppy Joes

You can thank Jim Gaffigan for putting the Diet Coke recipe bug in my head. The other day he “tweeted” that his wife looked at him funny for making “diet coke french toast”. I was hopeful he’d actually share the recipe, but I had no such luck. Instead, it prompted me to go in search of recipes that use Diet Coke. Call me crazy, but adding Diet Coke to any recipe seems a little white trashy to me. Much like adding Mountain Dew.

I give you Diet Coke Sloppy Joes (courtesy of recipezaar.com).

Here’s what you’ll need:

1 lb lean ground beef
1 medium onion, chopped
1 1/2 tablespoons arrowroot
1 cup diet cola
2/3 cup ketchup
2 tablespoons vinegar
1 tablespoon worcestershire sauce
2 teaspoons mustard
Hamburger buns

To make:

Brown beef and onion in a large skillet.
Drain well.
Stir in remaining ingredients. Mix ingredients together well.
Cover and simmer for 30 minutes.

Serve on hamburger buns with a side of tater tots.

White Trash Wednesday! Fake Twix Bars

I know what you’re thinking…how can I make my own Twix bars? I mean going to Wal-Mart to pick up the candy bars is inconvenient and costly. I’ll just make my own.

Well I’m thrilled I could provide a solution for you…once again, courtesy of Ghost Traveller.

1 sleeve Club Crackers (or just grab a couple of dozen crackers from the salad bar)
1 cup graham cracker crumbs
3/4 cup brown sugar
1/3 cup milk
1/2 cup butter
1 cup chocolate chips
2/3 cup crunchy peanut butter

Line the bottom of 13 x 9 inch pan with the crackers.
In a heavy sauce pan, bring to a boil graham cracker crumbs, brown sugar, milk and butter and cook over medium heat for 5 minutes. Boil. Stirring constantly.
Pour over crackers and top with another layer of crackers.
Melt together chocolate chips and peanut butter.
Spread chocolate mixture over crackers and refrigerate.

Puppy Chow – for humans

Call it what you want, this stuff is a little piece of heaven. Every year when it starts to get cold, I crave this stuff. I blame my high school friend Sarah. She first introduced puppy chow to me in the 11th or 12th grade when she gave it as a Christmas gift. I’ve been hooked ever since…and between you and me, 11th or 12th grade was a long, long, long time ago.

Let’s get down to the good stuff. Here’s what you’ll need:
1 tsp vanilla
1 1/2 cups powdered sugar
1/2 cup peanut butter
1, 6oz package of semi sweet chocolate chips
1/4 cup butter
9 cups Crispix

To make:
Measure the cereal out into an incredibly large mixing bowl. Set aside.
Heat chocolate, peanut butter, and butter over low heat, stirring frequently, until melted.

Remove from heat. Add vanilla, mix well.

Pour chocolate mix over cereal stirring until well coated. (Good luck with this step as it has proven to be the bane of my dessert making existence.)

Pour into a large, plastic food storage bag. Add the powdered sugar and shake well until everything is well coated.

Spread on wax paper to cool.

Store in an air tight container in the fridge.

And be amazed at how quickly this stuff disappears.

Spaghetti Casserole

One word my friends – PEPPERONI.

Let me be honest with you, this meal is not healthy. It’s comfort food at its finest and it’s good.
Don’t even worry your pretty little head about how unhealthy this meal is. Just know that you’ll love it.

Here’s what you’ll need:
12oz uncooked spaghetti
1/4 tsp salt
1 lb ground beef
1 package pepperoni (I was a nerd and used Turkey pepperoni)
1 26oz jar marinara
1 pkg shredded Mexican four cheese blend

to make:
Cook spaghetti with 1/4 tsp salt. Drain well and place in a lightly greased 13×9 in. baking dish.

Brown ground beef until the the meal crumbles and is no longer pink. Drain and set aside. Wipe skillet clean. Add pepperoni and cook over medium high heat, stirring occasionally, 4 minutes or until slightly crisp.

Top spaghetti in baking dish with ground beef.

Pour sauce over beef.

Arrange half of pepperoni slices over sauce.

Sprinkle cheese evenly across the top.

Arrange remaining pepperoni slices over the cheese.

Cover with lightly greased foil. Bake at 350 for 30 minutes. Remove foil and bake another 10 minutes or until cheese is melted and is beginning to brown.

White Trash Wednesday!

This recipe comes courtesy of a youtube video I happened across on the website Everyday Should Be Saturday. Works out pretty well that this video was shot on game day in Athens.

Are you ready?

It’s Dorito Salad.
No, your eyes aren’t playing tricks on you.
I said, DORITO SALAD.

You’ll need:
lettuce
cheese
beans
red onions
bag of nacho cheese doritos
creamy Italian dressing or some good old fashioned ranch dressing.

Mix all ingredients together and not only do you have a white trash recipe, but you’ve got a salad for your tailgate.

Unfortunately, there is nothing remotely specific about this recipe. I say do what makes you happy. It is a white trash recipe after all.
