It’s been a while…

Since I’ve even pulled up this little blog.  As you know, life has gone and turned itself upside down.  Being pregnant is well, it’s exhausting.  I kind of thought that one of the perks of being pregnant would be to have crazy random cravings…you know, the kind I could blog about. And you could make fun of me for. Sadly, that hasn’t happened.  Now, to be fair, I will confess that my love of chocolate has increased exponentially, but I kind of just blame that on the fact that I’m still trying to make sure the Easter candy doesn’t go to waste.  Because that would be wrong.

And bad.

So I must eat it.  Reese’s peanut butter eggs and all.

But I had to say that I have missed you.  And I promise I will make more of a concerted effort to blog more.  And not in a “mommy-blogger” kind of way (you know who you are missy).  I figure that even though I’ll be tending to a newborn very soon, I may (God willing) have some time to bake…and test out new recipes.  And let’s be honest, my camera will be coming out of retirement.  Hope the cobwebs will come off.  So I’ll most certainly need to practice taking photos on food too, right?  Then again, it may be all diet food.  Because homegirl is gonna have to lose some serious lbs.

Two New Recipes

As you know, things have been a little quiet on the blogging front for me over the past few months.   Work and life have been hectic and so I haven’t had as much time to spend in the kitchen baking fun, tasty things. The past three weekends I’ve actually been baking.  Now, they were nothing but whoopie pies, which I’ve made before, but hey, at least I’m back in the kitchen.  See, being in the kitchen does actually make me happy.

Exhibit A:

So that’s why I’m working on two new recipes.  I have to see which one suits me best, but it could be a few weeks before I know for sure.

In the meantime, here are the ingredients for both recipes:

Recipe #1:
sugar
spice
everything nice

Recipe #2:
frogs
snails
puppy dog tails

 

ps. yeap, that’s me.
at 17 weeks. but hey, how cool is my cooktop?

A White Trash Wednesday Miracle

I made you a promise and I actually kept it.  And in a (semi) timely manner no less. It’s shocking really because I’m one of those people who has all of these grandiose plans…made with the sincerest of intentions. Then life gets in the way. Really, it does. Between that 9-5 gig that pays for the roof over my head and the clothes on my back, the weekends away, the long commutes, the early morning workouts (say what?), the tv watching, and that side gig I’ve got going now, following through with certain commitments tends to fall by the wayside sometimes.

But I said I would make this meal and that’s exactly what I did.

And I’m thrilled I did for two reasons:
1. it was goooood.
2. it means I am, deep down, a little white trash.

And I’m okay with that.
Because deep down, I think that’s why you like me.

If you’re game and need a white trashy recipe to test out, by all means try this one.  But I do have a few thoughts. Mind if I share? Good. Thanks for playing along.
The recipe calls for cream of mushroom soup to be mixed with the ground beef. If you’re not one for the soup taste (my husband loathes the stuff), I say go for sour cream instead and while you’re at it, toss in a Lipton Onion soup mix for good measure.

I’m pretty sure I may go that route the next time I make the stuff.
And there will be a next time.

Lazy recipe

I don’t know about you, but I’m always wishing for more hours in the day.  You get up, go to work, spend far too much time on a commute, get home, attempt to unwind, walk the dogs, cook dinner, goof around on the computer, go to bed.

Either I’ve got too much on my plate or I’m completely inept at time management. So most nights all I want to do is snap my fingers and have dinner magically appear on the table.  Unfortunately, I’ve yet to conjure up that fairy.  So I make my fallback dish.

Pasta.

In some form or another, we eat a lot of pasta in my house. It’s cheap. It’s easy. And it’s incredibly hard to screw up.

This may also be the reason why I gain weight.  Ah, at least I’m happy.

So for this one, you need 5 ingredients:
farfalle (bow tie) pasta
pesto
chicken
olive oil
sundried tomatoes
(salt and pepper)

directions:
heat oil over medium heat.
dice chicken, season with salt and pepper, and cook in oil until browned.
meanwhile, boil pasta until al dente. drain.
once chicken is cooked through, add pasta, sundried tomatoes, and pesto.
toss together to coat well.

Optional extras:
crushed red pepper
minced garlic

And now you can go have that glass of wine you want while you unwind instead of wasting anymore time slaving over a hot stove.

White Trash Puff Balls

With the help of a little search engine called Google, I have found yet another tasty white trash treat.
And this time, I actually made it.

That’s right. Hell froze over because I gutsied up and made a White Trash recipe.

What’s scarier…I actually enjoyed this one. No, really. I ate two of them. Two puff balls.

Puff Balls
Ingredients:
1 -8oz package sliced pepperoni
1- 8oz container cream cheese, softened
1- 10 package refrigerated Crescent Rolls

To make:
Dice pepperoni into smaller pieces.
Add pepperoni pieces to cream cheese, stirring until blended together well.
Roll out crescent rolls into triangles.
Slice each crescent roll into three smaller triangles.
Add a spoonful of cream cheese/pepperoni mixture to center of each triangle.
Pinch up each point of triangle around the filling.
Place dough balls onto cookie sheet. Bake at 350 for 11-13 minutes (following crescent roll directions).

Autumnal Equinox.

The calendar tells me that we’re hours away from the first day of fall, but the suffocating heat is telling me something else. I don’t know about you, but when I think of Autumn, I envision wearing jackets, enjoying the crisp air not stressing over how low I can move the dial on the thermostat.

But right here in Atlanta it’s 90 degrees.
90.
Degrees.
That is insane.

My stomach wants me to cook fall food like pecan pie.

Going back to Cali

Alright, technically, I’m already in California, but you get the drift. The hubs and I are here for the USC/Virginia game….but really, I’m here to eat.  Because let’s be honest, it’s what I do best. 

Haven’t even been here a full 24 hours and I’ve already eaten about 4 meals.  All perfectly tasty.  Oh and because I’m in California, my first stop was the Coffee Bean.  If you’ve never been, I hate to say it, but you are missing out.  I know, way harsh.  So I’m sure the coffee itself isn’t that different from anything you can get at Starbucks, but that’s not why I go.  It’s their infamous Vanilla Ice Blended that has my heart…and stomach.

And I’m one down and many, many more to go.

Tonight we’re off to see Jimmy Kimmel and eat some more.  So as you can imagine, I’m ecstatic about the remainder of the days events.

Unfortunately, I’m a numbnut and forgot my usb adapater for my camera.  So basically, no pictures until I get back Sunday.  Not to worry though, I’m sure I’ll take enough pictures to entertain myself for at least a month.

Now if you’ll excuse me, I’m off to snack…
