It was an ugly day…

I had my 6 week follow up appointment today. You know, to check on how I’m doing after having little Camden. To tell me I can resume normal workouts, etc…

Yes, workouts. As if I knew anything about working out.

Well, my first appointment, the 3 week follow up was pretty freaking spectacular. I found out that I’d lost 20 lbs of pregnancy weight! Hallelujah! The smile on my face was enormous. The weight off my tummy was melting away. I was one happy girl.

That was until this morning.
When the scale told me I’d packed on 4 lbs.
In 3 weeks.

Now I get it…I’m at home all day long. I’m eating foods that I couldn’t eat during my pregnancy. I’m drinking drinks I couldn’t drink. But does all of that warrant gaining 4 lbs in 3 weeks? I don’t think so.

So I’m going to have to find a way to be neurotic. No wine. No soda. No chips. No happiness.
And I let the doctor know that my pre-pregnancy weight wasn’t good enough. That I wanted to be 10lbs lighter than that. So you know what she did? She gave me a goal. A goal to lose 15 to 20 lbs by mid December. Yeah, I’m used to the numbers on the scale going up…not down. So this should be interesting.

And did I mention that I don’t work out? Oh boy kids…you might want to buckle in. This is going to be one bumpy ride.

Sneak Peek: the nursery

You’ll have to forgive me for including some non-food related posts on to this little blog, but some of my most recent food making attempts have turned out less than stellar. 

As I mentioned a few weeks ago, the nursery was under way, but things were still far from done and nothing had been photographed.  Well, it’s still not completely finished, but I did manage to snap a few select shots last night.  These are more or less just the accessories, but honestly, these are my favorite features of Baby O’s soon to be room.

These owls are honestly just about the sweetest things I’ve ever seen. I made the decision to include owls a while back…not really sure how or why owls became a pseudo theme for the room, but they did. And these little fellas make me realize I made the right choice.
These little guys were handmade by a very dear friend.

The raindrop print I found in another nursery online and I instantly became obsessed. I made a rainy day mobile to complement the print, but it’s not hanging so you’ll have to trust me when I say it’s cute. And did I mention, handmade? By me? I know. Nuts, right?

And lastly, the family photos. I wanted our little guy to be surrounded by the people who will love him most in the world…and yes, that includes our dogs, or rather, the puppy versions of Libby and Justice. The photos took up a ton of wall space, but I couldn’t be happier with the finished product.

Now, just a few more weeks until Baby O will officially be here – hopefully loving this room as much as we do.

Huevos Rancheros

I know, I know. Hell apparently has frozen over. I’m blogging! Crazy, right? Just know that I’m going to start making more of an effort. I promise.

Now, let’s get back to the food. If you’ve ever had huevos rancheros at more than one restaurant, you’ll know they never taste the same twice. They can include a multitude of ingredients. And be served many different ways. Since I’m too lazy to find out how you’re really supposed to make them, I went with a pretty fool proof recipe. I’m pretty sure this recipe isn’t exactly authentic, but you know what? When it tastes this good, I’m not too concerned about how authentic it is.

Huevos Rancheros
(serves 2)
Ingredients:
3 tbsp olive oil
1/2 medium onion, diced
12 oz ground chorizo (since I didn’t go hunting for chorizo, I used spicy Italian sausage, out of the case, diced into small chunks)
1/2 can refried beans
1/2 can fire roasted tomatoes (which you can find at any grocery store on the canned tomato aisle)
1/2 tsp kosher salt
4 corn tortillas
1 tbsp butter
5 eggs
1 tbsp milk

Additional:
sour cream
mexican cheese blend
(3 skillets)

The original recipe can be found here, on Life’s Ambrosia, but again, I switched a few things up.

To make:
Heat 1 tbsp olive oil in a skillet over medium heat. Add 1/2 of the diced onions and cook until softened. Stir in sausage/chorizo. Cook 5-7 minutes until sausage is cooked through. Stir in refried beans. Cook an additional 5 minutes. Reduce heat to low.

In another skillet, heat 1 tbsp olive oil. Add in remaining onions and cook until softened. Stir in fire roasted tomatoes and add salt. Cook for 5 minutes over medium high heat. Reduce heat to low.

Heat last remaining tbsp of oil in yet another skillet. Cook tortillas for 30 seconds on each side. Transfer to a paper towel lined plate. Once tortillas are cooked, drain oil from skillet. Melt butter over low to medium heat. Meanwhile, scramble up eggs using the tbsp of milk. Add to the skillet and scramble until eggs are done. Top with cheese and melt through. Remove from heat.

To assemble:
Place one tortilla on a plate, top with sausage/refried beans. Top with second tortilla. Add scrambled eggs. Spoon tomatoes over top. Add cheese and sour cream.

A Thanksgiving List

As we’re merely hours away from Eatfest 2010, I thought I’d throw a list up here. This time, for things that I’m thankful for…in no particular order. 1. Family. They may drive me bonkers, but I love ‘em. And can’t imagine my nutso life without them. 2. The husband. Even though he technically falls into the family category, he kind of deserves his own mention. 094 3. Food. Doesn’t get any better than this. front door 5. You guys. Plain and simple I ♥ you guys. And if you’re wondering who you are, look at all of the links listed on this blog. You keep me entertained. And each one of you guys has inspired me whether you know it or not. So thank you all. Now go enjoy this Thanksgiving eat-a-thon with your loved ones…(or the ones you barely tolerate).

WTW – Dipsticks, Snack of the Month

Not sure if I’ve mentioned, but I love getting emails from you guys. Love, love, love it. And what I really love is when you send me white trash recipes. It makes my heart all a-flutter. You know why? Because all I have to do is sit back and pretty much do absolutely nothing.

Kidding, kidding.
The other day Becki D. of Becki Bakes sent me her second White Trash Recipe recommendation.  The first one was the ever so tasty black ‘n blue pancakes. And this one, is more of a snack.  And she’s aptly named this snack, Dipsticks.

I discovered the perfect snack this afternoon while ransacking my pantry.
Anyhow, this most perfect WTW gem goes like this:
-Grab your jumbo-sized barrel of Pretzel Rods from Sam’s Club (because who doesn’t need a year’s supply of pretzel rods?)
-Grab your obligatory Foodie Approved jar of Nutella
-Dip pretzel and repeat as many times as needed to ward off the Crazies.
Not only does this recipe require 0 utensils or preparation of any sort, if you close your eyes you can almost pretend you’re chowing down Ferrero Rocher Fine Hazelnut Chocolates instead of pretzel sticks.

Sweet, salty, simple.

YAWYEOR note: These are awesome. I kid you not. I only had the honey wheat pretzel rods on hand, but went for it anyway and oh my goodness I thought I’d died and gone to chocolatey salty heaven.

Thanks Becki D. for introducing this treat to my world. From now on I will always have pretzel rods and Nutella stocked in my pantry.

In the kitchen

Or what I should have titled, “What I’m coveting for my kitchen”…

It’s probably not much of a secret, but I spend my evenings sitting in front of my computer. Most nights I’m trying to catch up on all my friends’ blogs. (For the full list, please look to your right and then when you’re done with that, click on Link Love ♥.) That might explain why the flooring in my house is coated in dog fur. Thinking I should give up one night of internet reading for running the vacuum cleaner. But one of the other time sucks in my life is soaking in all of the food blogs out there.

Reading about photography tips from Helen from Tartelette.

Wondering if I’m brave enough to attempt some recipes.

Questioning if I’m silly for even thinking I belong in this food blogging world.

But more than anything, I spend the time drooling over food bloggers’ props.

So during my lunch break, I headed straight for Anthropologie because really and truly, there’s no better source for adorable kitchen props.

And these, my friends, are stinking adorable.
Kind of like this pie dish my friend, Christina, gave me. Just so happens that it, too, is from Anthropologie.

C&O Trattoria, Venice

I give up. I’ve been fighting the back to reality, reality since Sunday night. As Ali from three baking sheets to the wind put it, “keep the daydreamy vacation bubble floating”…and that’s exactly what I’m going to do.

Because, to quote Ben Stiller, reality bites.

So I’m going with it…I’m reliving my mini-vacation through this here blog…photos, foods, and all.

Our second to last night out West we went to C&O Trattoria over in Venice. It’s just one of those places that makes you happy to be there. The atmosphere, the food, the environment make the restaurant what it is.
Well, that and the garlic knots.

It’s About Thyme

No, really. This blog post is about a quaint little cafe and market in Santa Monica called Thyme. But don’t kid yourself, that title up there totally wrote itself in just about the lamest way possible.

Hey, I can admit it.

Well, if you hadn’t guessed from my previous post, I was on vacation.
In Southern California.

Forgetting about all things remotely related to my real world life. And it was freaking fantastic.
But I’m home now and reality is sinking in. You know…those fun things like work, cubicles, commuting, bills. So while I’m still in complete denial vacation mode, I’ll throw some photos from my trip up here…

These are from that seriously adorable cafe I was referring to up there called Thyme. And unlike some other cute little bakery/cafe/market, these guys were nice enough to let me take some photos inside their place of  business.  (You know who you are Miss Bakery lady.)  And I’m glad Thyme was so gracious, because I really wanted to share these photos.  Beside the obvious fact that the food was incredibly tasty (that would be my grilled cheese with bacon falling out of it), the store itself was adorable.  And packed.  And I’d bet money that this time next year, you will have heard of it.

So see, I wasn’t lying.  It was about Thyme.

More from my trip to Santa Monica coming over the next few days.  That’s right. Suck it up. I’m not leaving my little vacation mentality bubble for quite a while.  Buckle in.

White Trash Wednesday! Bacon Pimiento Cheese

My afternoon with Chef Natalie was full of learning, photos, and food, both healthy and white trashy. In addition to the mango-pineapple smoothies, Natalie stepped it up a notch by making bacon pimiento cheese. I’m not sure if you’re aware, and I know Chef Natalie had no clue, but pimiento cheese is nothing short of heaven for me.

For real.

Growing up I thought it was the food of the devil. I mean, the name itself…pimiento…was utterly repulsive. Little did I know it was nothing more than sharp cheddar, pimientos, and mayo. Now that I’m older and wiser, I know the truth.

But Natalie took it one step further. Instead of making the conventional version, she added bacon. And for this, she is officially my new best friend. And although technically pimiento cheese is a tad bit white trash, this recipe is nothing short of a mouthwatering treat.

bacon pimiento cheese

Bacon Pimiento Cheese
roasted peppers
cholula hot sauce
sharp cheddar, shredded
mayo
bacon
diced chives
salt and pepper to taste

Mix peppers, cholula, cheddar, mayo, salt and pepper well.
Top with crumbled bacon bits and chives.

Serve on garlic bread.

And if I were you, I wouldn’t reserve this recipe solely for your white trash enjoyment, I’d make it for your next tailgating adventure too.

Just sayin’.

Smoothies by Chef Natalie

Since being healthy is nothing more than an exercise in futility for me, Chef Natalie was kind enough to indulge me by preparing smoothies for our little get together.

She made us mango-pineapple smoothies.
And because they were so simple to make, I’m already making smoothies for myself. {I know, it’s as if hell has frozen over.}

Natalie made a few simple changes to a normal smoothie recipe and it tasted delicious…and I didn’t even notice that it was in fact completely healthy.

Mango-Pineapple Smoothie
{printable recipe}

frozen mango chunks
frozen pineapple chunks
greek yogurt
honey
vanilla soy milk
2-3 pieces candied ginger, optional

Toss all ingredients in the blender and blend until smooth.

{Last night I even prepped a berry smoothie for my morning commute. I’ll be healthy yet…even if it kills me.}
